- In a bowl, whisk olive oil, lemon juice, lemon zest, paprika, garlic powder, salt, and pepper. Add chicken and marinate for at least 10 minutes.
- Preheat grill to medium-high heat. Grill chicken for 5–6 minutes per side or until fully cooked and nicely charred.
- Place sliced zucchini, yellow squash, red peppers, and tomatoes on the grill. Cook for 3–5 minutes until lightly charred.
- Boil or grill the corn on the cob until bright yellow and tender.
- Assemble the plate with grilled chicken, vegetables, and corn. Serve warm.
