Ingredients

  • 2 cups pasta any type
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/4 cup parmesan cheese grated
  • 1 tsp salt to taste
  • 1 tsp pepper to taste

Method
 

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the chicken cubes and season with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 7-8 minutes.
  3. Add garlic to the pan and cook for another 1-2 minutes until fragrant.
  4. Add the cherry tomatoes and spinach to the pan and cook until the spinach wilts, about 2 minutes.
  5. Add the cooked pasta to the pan, toss to combine, and cook for an additional 2-3 minutes.
  6. Top with grated parmesan cheese before serving. Serve hot and enjoy!
