Ingredients
  

Chicken
  • 2 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
Mashed Potatoes
  • 3 medium potatoes peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk
Vegetables
  • 1 cup mixed vegetables carrots, green beans, peppers
  • 1 tsp olive oil

Method
 

  1. Boil potatoes in salted water until tender. Drain, mash with butter and milk, and set aside.
  2. Season chicken breasts with salt and pepper. Heat a skillet with olive oil over medium-high heat.
  3. Cook chicken for 6–7 minutes per side until golden and fully cooked.
  4. In the same skillet, sauté mixed vegetables in olive oil for 4–5 minutes.
  5. Serve grilled chicken with mashed potatoes and sautéed vegetables.
