- Boil potatoes in salted water until tender. Drain, mash with butter and milk, and set aside.
- Season chicken breasts with salt and pepper. Heat a skillet with olive oil over medium-high heat.
- Cook chicken for 6–7 minutes per side until golden and fully cooked.
- In the same skillet, sauté mixed vegetables in olive oil for 4–5 minutes.
- Serve grilled chicken with mashed potatoes and sautéed vegetables.
