Ingredients
  

  • 2 cups grilled chicken breast chopped
  • 2 cups mixed greens such as spinach and arugula
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/4 cup almonds chopped
  • 2 tbsp olive oil for dressing
  • 1 tbsp balsamic vinegar for dressing

Method
 

  1. Grill the chicken breasts until fully cooked. Let them cool for a few minutes, then chop into bite-sized pieces.

  3. In a small bowl, whisk together olive oil and balsamic vinegar to make the dressing.
  4. Drizzle the dressing over the salad and toss gently to combine all the ingredients. Serve immediately.
