Ingredients
  

Chicken
  • 2 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • salt & pepper to taste
Vegetables
  • 2 cups mixed vegetables broccoli, carrots, snap peas, etc.
Couscous
  • 1 cup couscous
  • 1 cup boiling water or broth

Equipment

  • Skillet or Grill Pan
  • Steamer

Method
 

  1. Season chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  2. Heat skillet or grill pan over medium-high. Cook chicken 4–5 minutes per side until golden and cooked through.
  3. Steam mixed vegetables for 4–6 minutes until tender but still bright and crisp.
  4. Combine couscous with boiling water or broth. Cover and let sit for 5 minutes, then fluff with a fork.
  5. Plate chicken with steamed veggies and couscous. Serve warm.
