Chicken Drumsticks
  • 8 pieces chicken drumsticks skin-on, bone-in
  • 1 tbsp olive oil for roasting
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
Veggies
  • 1 cup carrots sliced
  • 1 cup potatoes cubed
  • 1 cup green beans trimmed

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Season the chicken drumsticks with olive oil, garlic powder, paprika, salt, and black pepper. Arrange them on the baking sheet.
  3. Prepare the vegetables: slice the carrots, cube the potatoes, and trim the green beans. Place them in a roasting pan and drizzle with olive oil. Season with salt and pepper, then toss to coat.
  4. Place the chicken drumsticks and vegetables in the oven. Roast for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  5. Remove the chicken and vegetables from the oven. Let the chicken rest for a few minutes before serving with the roasted vegetables on the side.
